Annette is experimenting to see how many lives she can pack into one, with such varied careers as graphic designer, jazz vocalist, and writer. She has found the greatest happiness in service to others, whether it be through volunteering or by helping to communicate an idea, so when her neighbor Patrick revealed his plans to open a vegan cafe and bakery, she knew that her next life would focus on facilitating this dream.
While not a vegan, she is energized by this opportunity to explore plant-based cooking, and to help other food lovers embrace this kind and sustainable cuisine.

Patrick has been conjuring Humble for the better part of a decade. Serving great food has always been the driver, but creating a welcoming and inclusive space is what his vision of Humble is all about.
Growing up on the Jersey Shore with two great cooks for parents, Patrick was always surrounded by fantastic food. But it wasn't until his sister got him a summer job at Twisted Tree Cafe that Patrick began to explore the benefits and surprising comforts of plant-based food. When he met his wife, who was already eating a mostly plant-based diet, the fix was in: finding, eating and learning how to make vegan food without compromise became his primary objective.
Patrick has been consistently building on that goal, from his studies at the Natural Gourmet Institute in Manhattan to his positions at Good Karma Vegan Cafe at the Jersey Shore, Lael Cakes in Brooklyn, and Heart Beet Kitchen near Philadelphia. With Humble, Patrick will continue to expand the boundaries of what plant-based eating can be.
Humble is a plant-based cafe and bakery in Lambertville, NJ specializing in vegan fast-casual menu items and baked goods. We were founded in the spirit of socially-conscious cooperation with local farms, businesses and families, and are committed to the goal of making plant-based cuisine accessible and affordable to all.
